Mimi’s Plum Torte

Mimi’s Plum Torte









1 cup sugar

½ cup sweet butter

1 cup flour

1 tsp baking powder

pinch of salt (or none if you use salted butter)

2 eggs

12 plums, sliced in half, or other fruit


Cream butter and sugar, add eggs and remaining dry ingredients, beat well.  Spoon into a buttered and floured 9-inch spring-form cake pan.  Arrange plums close together skin side up on top of the batter (or use other fruit such as apples and/or berries).  Optional:  sprinkle with lemon juice or cinnamon and sugar.  Bake at 350 degrees for an hour.  Serve with whipped cream or ice cream.
